Kombu is essential to Dashi, the revered Japanese noodle broth or soup stock. It can be added to any soup or stew to dramatically bring out flavors. Stew vegetables with kombu. Pickle, deep-fry, pan or oven roast it then grind into a powder for a tasty, beneficial condiment for the table. Sprinkle some on popcorn as a low-sodium, rewarding variation.
Add a small piece to soup, stewed veggies, and grains as they cook. Cook one pound of dried beans with one half of a Kombu strip to smooth mouthfeel & enhance flavor.
Kombu Soup Stock
1 strip Eden Kombu
4 cups water
Bring water and kombu to a boil, reduce flame and simmer 4 minutes. Remove the kombu. The stock is now ready to use as a base for making soups and noodle broth.
